Ms. Carol Jefcoat Evans, 81, of Winston-Salem passed away Monday, February 14, 2021. Carol was born in Oktibbeha County Mississippi to the late James N. Jefcoat and Josephine Jefcoat on March 8, 1940. Carol lived her life in the southeastern United States and for the past 17 years, made Winston Salem, NC her home. She had the ability to grow where she was planted and she enjoyed making her house her home, no matter where the location. Carol enjoyed life and that was evident in her day-to-day interactions with people. The light of her eyes was her three great grandchildren. She adored seeing them in person as well as remotely via internet connections and her eyes sparkled the whole time they were talking! She looked forward to any family gatherings, trips, or mealtimes together. Carol had many friends and enjoyed spending time with each of them. She took great pride in being “computer savvy” as she often assisted other senior citizens with learning how to navigate their smart phones. As a member of Pine Grove Methodist church, she sang in the choir and rang hand bells. She used her creativity to work on a variety of church sponsored projects. Carol had a soft spot in her heart for animals. This extra special fondness for animals led her to start her own pet sitting business. She enjoyed taking care of these beloved animals and allowing the pet owners, who soon became good friends, to relax and enjoy their vacations. Carol was always giving to others. She volunteered at her great granddaughter’s school, she taught crochet at her daughter’s yarn shop, she created beautiful Christmas bows and took pride in her knack for holiday decorating. Carol generously gave of her time to drive and deliver meals on wheels with her son-in-law. Carol loved to travel. She had the opportunity to travel extensively with her husband who competed in Barbershop Quartet competitions and a variety of beautiful cities across the US. Upon her retirement, Carol visited Coast Rica with her dear friend from high school. She enjoyed camping as a young adult and later, enjoyed quick weekend trips to the beach, mountains, and lakes. Carol was frequently seen in the early morning hours working in her garden. She enjoyed sharing her flowers and vegetables with family and friends. Her quick wit and intelligence made her the best storyteller in the family! Her love for her husband and her children shone brightly and she taught them how to share that love in their own lives. Along with her parents, she is preceded in death by her husband, George Evans, and her brother, Nonnie Jefcoat. Carol is survived by her children, Jo Thomas (Steve Hill) of North Carolina, a son and his wife of Florida, and Katie Davis (Michael Davis) of Georgia; grandchildren, Zach (Melissa) of North Carolina, Deven (Natalyah) of Georgia and a grandson from Florida; three great grandchildren, Emma, Wolfe, and Olivia. A funeral service will be held 11:00 AM Saturday, February 19, 2022 at Pine Grove United Methodist Church with the Rev. Marilyn Weiler officiating. Committal will follow at the church cemetery. The family will receive friends, 10:00-10:45 am before the service. In lieu of flowers, memorials may be made to Pine Grove United Methodist Church (Music Department), 1130 Jonestown Road, Winston-Salem, NC 27103; The Forsyth Humane Society, 4881 Country Club Road, Winston-Salem, NC 27104 or Trinity Elms Health & Rehab, 7449 Fair Oaks Drive, Clemmons, NC 27012.
